potatoes.....shredded

Shredded potatoes for pancakes....I have to work on this.  While I made the potato pancakes, and yes, they were delicious, but I did not get all the water out of them.  I tried, I thought that I did, but as I was making them, the shreds seemed to get watery.  I am going to try this again. 

I paired it with the left-over corned beef, woo hoo....No more meat....We ate it all, I am so proud.

We always had so many left overs that were thrown out, but lately, we have been doing a bang up job of not cooking to the excess and eating what is left.  I am proud. 

now if only I could get all the water out of the potatoes, I would be golden.....
