Happy New Year's Eve...

Today is half a holiday, in my opinion anyway.  We needed to get the leftovers that we had made into meals, then put in the freezer.  We made pork broth, put it on the porch to cool, skimmed the fat, browned the medispolse, made the gravy, and then cooked the medispolse the rest of the way.












We let them cool and put them in the freezer containers.  We then put them in the freezer.  I think that we are going to bring them up to Andrew and Melanie.

With the rest of the Fresh Ham. we made pyttepanna.  Mor used to make us pyttepanna, my mom made us pyttepanna.  So for the second time this week I made pyttepanna, but this time after we cooked it, we froze it.  Firstly, we chopped onions and garlic.  Scrubbed and diced 8 large potatoes, diced about 1.5 pounds of fresh ham.  We sauteed the onions till they were almost soft, added 4 cloves of chopped garlic, then the potatoes, cooked them for a few minutes before adding the fresh ham.  Then seasoned with salt, pepper, sage, thyme, and as homage to Cathy Roper, I added summer savory that came from Nova Scotia. 

It tasted fantastic.  I will look forward to having it in a few weeks, I will add two fried eggs to the pyttepan.  It will fantastic.











I hope and pray that in this New Year we continue moving forward to becoming the best possible people we can be.........
